Iburi gakko is smoked daikon (radish) pickles (a speciality of Akita Prefecture). Its unique smoky flavor goes well with potatoes and mayonnaise. Iburi gakko is a fermented food with high nutritional value and contains lactic acid bacteria and has a high nutritional value as it absorbs not only dietary fiber and vitamin C contained in daikon radish, but also vitamins and minerals contained in rice bran.
