Matcha is made by grinding tea leaves into a fine powder through a special process, allowing you to consume the whole leaf and its nutrients. While matcha is known for its mild flavor and versatility in various dishes, pairing it with tofu creates a refreshing dessert with a rich yet light taste.
Nutritionally, it contains catechins, which help suppress blood sugar spikes, as well as vitamins C and E with antioxidant properties. For added flavor, you may enjoy it with kuromitsu (brown sugar syrup) or kinako (roasted soybean flour).
