Drying persimmon is one method of astringent removal while also preserving it. Dried persimmons remain moist with half their water removed, and the semi-raw type is called “anpo persimmon. This name became popular as refrigerated storage and delivery became possible. They are very soft that they can be pinched with the fingers and have a smooth, melt-in-your-mouth texture. Anpo persimmons are rich in healthy nutrients such as vitamin C, potassium, and dietary fiber. They are also rich in antioxidant polyphenols, which are believed to help prevent lifestyle-related diseases.
