Pork is rich in B vitamins, including B1 and B6, which inhibit glycation in the body. Vitamin B12 is also said to help regulate sleep rhythm.
Sixty percent of the fat in pork is “discordant fatty acids,” which help to thin the blood, reduce bad cholesterol, and decrease arteriosclerosis and triglycerides. The balsamic vinegar used in the sauce is also rich in polyphenols and has antioxidant properties. The sweet sauce goes very well with pork.
